Vegetarian – looking at a balanced diet without meat. Protein is very important and getting enough of the full range of amino acids is a lot more challenging if you are not eating meat. Variety and ensuring that other trace elements are also included is vital.

Vegan – without any animal products at all therefore as above but even more so.

Sustainable Eating – sourcing seasonal food locally to reduce food miles and gain the health benefits of eating really fresh food. Reduced environmental load due to less packaging and use of chilled units for storage.

Gluten Free – because it is so cheap wheat finds its way into lots of foods to bind them and bulk them out. Over the years wheat has been developed to have ever-increasing levels of gluten because this enables confectioners to include even more air into their products. We are not designed to cope with such high levels of gluten in our diet and for some people their body rebels and produces unpleasant allergic reactions. Dairy Free – another allergy which can have dramatic consequences, looking at exciting ways of replacing cheese and other dairy products in your diet. (Milk, cream, butter, ice cream, cream, yoghurt) and how to identify a dairy product on a label i.e. whey powder

Sugar Free – particularly important for diabetics, an over view of what has happened to your body when you are diagnosed with diabetes and how what you eat will affect your ability to manage your sugar levels. The body is no longer able to remove sugar from the blood stream and circulating sugar is very damaging.

Seasonal Cooking – enjoy eating with the seasons like they did in the old days. (See sustainable eating). We also look at ways of preserving food for the winter and hungry gap.

Cakes – explore a wonderland of cake baking from cup cakes to Christmas cakes using a variety of flours.

Hedgerow Food – in 2 parts, come into the country side and gather food for free and see how it can be transformed into tasty meals. Alternatively just turn up and see what we have found.

Soups – unlimited possibilities for liquid food can be eaten hot or cold.

Juicing – an easy and tasty way of eating lots of raw vegetables and if you make them into smoothies you get the benefit of the fibre as well.
